蛋包饭 Omurice (Japanese Omelette Rice)


年尾总是忙碌的日子, 除了工作上很多工作要完成外, 自己年尾的旅程也应该要来安排一下了。 所以不是这个周末不在家, 就是这个周末有事忙。 因此花在厨房的时间也间接的减少了, 所以一有时间, 我就会好好利用空闲的时间, 做自己喜欢的事情。 这个蛋包饭其实要做好久了, 但是就一直被耽搁下来, 现在终于有机会让它上场了。



蛋包饭

(3人份)
  • 鸡肉 230g
  • 玉米粒 50g
  • 洋葱 (切粒)1个
  • 蒜茸 1tsp
  • 米酒 1Tbsp
  • 蘑菇 (切片) 5-6个
  • 番茄 (去子, 切丁)1个
  • 茄汁 2Tbsp
  • 白饭 2碗半
蛋皮材料
  • 鸡蛋 6个
  • 鲜奶油 6tsp
  • 盐 少许 
腌料 
  • 酱油 2tsp
  • 粟粉 1tsp
  • 糖1tsp
  • 盐 少许
  • 胡椒粉 少许
  1. 鸡肉切丁, 和腌料混合15分钟。 
  2. 烧热油锅, 下洋葱, 炒至软身透明, 拨开至锅边, 再下少许油, 下蒜茸爆香。 加入鸡肉, 炒至转白色, 加酒, 炒匀, 让鸡肉吸收酒味。
  3. 下蘑菇炒匀, 倒进番茄, 茄汁。 煮至汁收干浓稠。 最后加入玉米粒, 煮片刻。 加入白饭炒匀。 分别盛在三个碗里面, 备用。
  4. 把2个鸡蛋打散, 加入2tsp鲜奶油,盐。 用中火烧热油锅, 倒进蛋汁。 趁蛋汁还未凝结时, 旋转油锅, 令蛋汁铺成一圆饼。 
  5. 蛋煮至9成熟, 离火。 放一份炒饭在中间, 将蛋皮的两边翻起, 向中间折, 把饭包起来, 快手把蛋包饭翻转在碟上。
Omurice (Japanese Omelette Rice)
(for 3 people) 
  • Chicken, diced 230g
  • Frozen corn 50g
  • Onion, diced 1
  • Minced garlic 1tsp
  • Rice wine 1Tbsp
  • Button mushromm, sliced 5-6
  • Tomato, seeds removed and diced 1
  • Tomato ketchup 2Tbsp
  • Rice 2 1/2 bowl
Ingredients of fried egg
  • Egg 6
  • Whipping cream/ thickened cream 6tsp
  • Salt, to taste
Marinade
  • Light soy sauce 2tsp
  • Corn flour 1tsp
  • Sugar 1tsp
  • Salt and pepper to taste
  1. Mix chicken with marinade for 15 minutes. Soak frozen corn in boiling water for 10 minutes and drain well. 
  2. Heat oil in frying pan over medium heat, add onion and cook till translucent. Push to sides of the pan. Add some oil and saute garlic till fragrant. Add chicken, cook till colour has changed. Pour in wine and stir well, let the chicken absorp the wine. 
  3. Toss in mushroom and stir well. Add tomato, kethcup, and cook till sauce is thickened. Add corn and cook briefly. Add in rice and mix well. Transfer into 3 bowls for later use.
  4. Beat 2 eggs with 2tsp of cream and salt. Heat oil in a non stick pan. Pour the egg mixture into the pan. Spread the egg immediately and make a round omelet by moving the pan aroud. 
  5. When the egg is 90% cooked, remove from heat.Place one bowl of rice in the middle. Fold top and bottom sides of omelet over the rice. Quickly turn the omurice over to the place. 

这个食谱看起来有点长, 不过做出来也不会太难, 就是饭炒好后, 包起来就完成了。 其实最具挑战性的部份还是把蛋包饭翻转在碟上的时候吧, 真的很担心会失手, 不过最后的最后, 我的蛋包饭还是可以完整的呈现出来。 这个炒饭的味道我和家人都蛮喜欢的, 茄汁带些甜味, 很开胃。 下次有机会我要再尝试, 再练习我翻转蛋包饭的技巧。
