肉馅蒸豆腐 Steamed Layer Stuffed Tofu


通常周末都会下橱, 所以一时厌倦了烤鸡或者炸鸡块之类的时候, 就要尝试寻找新意了。 这个食谱是我万中选出来的, 呵呵, 还好真的没有让我失望, 豆腐跟肉碎真的配合得天衣无缝, 非常合我和家人的胃口, 这个食谱我真的大大推荐的。 


肉馅蒸豆腐

馅料
  • 鸡肉碎 150g
  • 冬菇, 切碎 3个
  •  萝卜碎 2Tbsp
  • 姜汁 1tsp
  • 盐 1/2tsp
  • 糖 1/2tsp
  • 胡椒粉少许
  • 粟粉 1tsp
  • 麻油 1/2tsp
  • 鸡蛋, 1个, 打散
把以上全部 (除了蛋液)混合一起, 最后先加入一半的蛋液搅拌, 然后才慢慢加入剩余的, 如果太稀了, 可以不用加完。 

盒装豆腐 1盒, 先用刀横切两份。 把一份馅料抹在豆腐上, 盖上另一片豆腐, 再抹上剩余的馅料即可。 用大火蒸大概 25分钟。

酱汁
  • 葱头, 切碎 1个
  • 豆酱 1/2tsp
  • 蚝油 1tsp
  • 酱油 1tsp
  • 糖 1/2tsp
  • 1/2tsp 粟粉 + 1/3杯水
  • 油 2Tbsp
  1. 锅热油, 把葱头碎炒香, 加入豆酱, 炒至香。
  2. 加入蚝油, 酱油, 糖和粟粉液。
  3. 煮滚, 直到喜欢的浓度。 然后倒上蒸熟后的豆腐。

Stuffing
  • 150gm minced chicken
  • 3 dried Chinese mushrooms, soaked and finely chopped
  • 2 Tbsp Chopped carrots
  • ½ tsp salt
  • ½ tsp sugar
  • 1tsp ginger juice
  • Dash of pepper
  • 1 heaped tsp cornstarch
  • ½ tsp sesame oil
  • 1 egg, beaten
Mix everything together except egg. Lastly drizzle in half and egg first, mix and adjust consistency with more egg if needed. The consistency should be spreadable but not dripping.

Assembly1 piece silken tofu about 350gm, sliced horizontally into two and spread the stuffing.
Steam tofu on high heat for 25 minutes.

Gravy
  • 1 shallot, finely chopped
  • 1 level tsp bean paste or hot bean paste
  • 1 tsp oyster sauce
  • 1 tsp light soy sauce
  • 1/2 tsp sugar
  • ½ tsp cornstarch +1/3 cup water
  • 2 tbsp oil
1. Heat oil in wok, saute chopped shallot until fragrant. Put in bean paste and saute until fragrant.
2. Put in oyster sauce, light soy sauce, sugar and cornstarch solution.
3. Bring to a boil and let it reduce to preferred consistency. Dish up and pour onto steamed layered tofu.


这个蒸豆腐再炒多一个蔬菜, 又是满足均匀的一餐了。 唯一有点埋怨的是我的酱汁煮得太浓稠了, 下次煮得比较稀, 应该更好配饭。 原食谱用的是猪肉和虾仁, 但是我家比较少煮这两个, 所以用鸡胸肉取代。 至于如何把豆腐从盒子取出来, 我本来是不晓得, 把豆腐弄得破碎一块块的, 后来看过这个方法后, 我才恍然大悟, 立刻学下来了。

    I reckon that your stuffed tofu looks like a tofu sandwich but this is definitely a healthier option with less carb!
