火龙果黑芝麻燕菜月饼 Dragon Fruit Black Sesame Jelly Mooncake


燕菜月饼其实去年我就想自己动手做了, 但是都还没有机会做中秋节就静悄悄的过了。 所以今年我就特地提早做月饼来练习一下, 也顺便尝试不同的口味。 这次尝试的是火龙果和黑芝麻的组合, 喜欢它们对比的颜色, 给人一种清新的感觉。 而蛋黄的部份, 我用了南瓜来弄, 有像吗?



火龙果黑芝麻燕菜月饼
南瓜燕菜蛋黄 1盘
取自Anncoo Journal 
这个类似结冰的模型可以做出可爱的小蛋黄。

  • 南瓜, 切小块 100g
  • 水 150ml
  • 糖 35g
  • 水 170ml
  • 燕菜粉 1.5tsp
  1. 150ml水,糖和瓜煮烂,过滤,挤出成瓜水。
  2. 瓜水,170ml水和燕菜粉一起倒入煲里,用中火不停的搅拌至滚。
  3. 倒入制作冰块的小圆模内,待凝固扣出。
黑芝麻燕菜
  • 黑芝麻 30g (炒香再放入食物调理机磨至变粉)
  • 糖 30g
  • 燕菜粉 1 3/4 tsp
  • 水 150ml
  • 鲜奶 100ml
  • 椰浆 50ml (我用20ml浓椰浆加30ml的水)
  • 班兰叶
  1. 把糖, 燕菜粉和水加入班兰叶放入煲里头煮至燕菜粉和糖溶化。 
  2. 加入磨好的黑芝麻粉, 搅拌均匀, 煮2分钟。 
  3. 转小火, 加入鲜奶。 
  4. 加入椰浆,  开始滚后离火。
  5. 倒入少许进小纸杯中, 放入蛋黄, 再把剩余的倒入, 直到掩盖蛋黄, 放入冰箱冷藏至凝固。  
  6. 取出黑芝麻燕菜, 用刀子轻刮上下两面,这样两者才互相粘在一起。备用。

黑芝麻燕菜放入纸杯, 然后放入蛋黄。


火龙果燕菜
  • 糖 80g
  • 燕菜粉 3tsp
  • 水 400ml
  • 椰浆 80ml (我用40ml浓椰浆参40ml的水)
  • 火龙果肉 120g (用叉子压烂)
  • 班兰叶
  • 柠檬汁 1tsp
  • 蜂蜜 2Tbsp
  1. 把糖, 燕菜粉,水和班兰叶放入煲里煮至燕菜粉和糖溶化。 
  2. 转小火, 加入火龙果肉。
  3. 加入柠檬汁和蜂蜜。 
  4. 加入椰浆, 开始滚后离火。 
  5. 把一些火龙果燕菜倒入模型, 然后半凝固后放入黑芝麻燕菜, 再把剩余的火龙果燕菜倒入至满.
  6. 放入冰箱冷藏。 
 
 倒入一些火龙果燕菜, 半凝固后, 再放入黑芝麻燕菜, 再把剩余的火龙果燕菜倒入至满.

-以上的材料可做出4个燕菜月饼-

Dragon Fruit Black Sesame Jelly Mooncake

Jelly pumpkin egg yolk for 1 tray

  •     100g Pumpkin, chop to small pieces
  •     150g Water
  •      35g Sugar
  •      170g Water
  •      1 1/2 tsp Agar agar powder
  1. Bring 150g water, sugar and chopped pumpkin to boil in a pot till pumpkin becomes very soft and strain.
  2. Return pumpkin liquid to pot and add 170g water into it with agar agar powder. Stirring liquid with a hand whisk till boil add medium heat and pour into the ball-shaped mould and cover.
  3. Chill jelly egg yolk to set in the refrigerator for 15 minutes and remove them from mould. Set aside for later use. 
Black Sesame Filling 
  • 30g black sesame seed (toasted, then blended until fine)
  • 30 gm. caster sugar
  • 1 3/4 tsp agar-agar powder
  • 150 ml water
  • 100ml fresh milk
  • 50 ml coconut milk (20ml coconut milk mixed with 30ml water)
  • 1 blade of pandan leave
  1. Boil sugar, agar-agar powder, and water with pandan leave in a pot until agar agar and sugar dissolves. 
  2. Mix in grounded black sesame and stir to make it smooth.  Let the mixture simmer for 2 minutes.
  3. Lower flame and mix in fresh milk.
  4. Mix in coconut milk.  Turn off flame once mixture start to boil.
  5. Pour in small bowls and let it set.
  6. Remove from bowl, use a fork to scratch surface (top and bottom). This is to make sure the filling and skin will stick to one another. 
Dragon fruit skin
  • 80 gm. sugar
  • 3 tsp. agar-agar powder
  • 400 ml water
  • 80 ml coconut milk (40ml coconut milk mix with 40ml water)
  • 120 gm red dragon fruit (mashed with fork so that seeds remain visible)
  • 2 blades of pandan leave 
  • 1 tsp lemon juice
  • 2 tbsp honey
  1. Boil sugar, agar-agar powder and water with pandan leaves in a pot until agar agar and sugar dissolves.
  2. Lower flame and mix in blended dragon fruit.
  3. Add in lemon juice and honey.
  4. Mix in coconut milk.  Turn off flame once mixture start to boil.
Assemble 
  1. Pour in some skin agar agar into mooncake mould (If a see-through effect is preferred (i.e. can see the filling), lessen the amount put in).
  2. When it is half set, put in the filling then pour the balance skin mixture into the mould until full. Let it set.
  3. Chill in the fridge before serving.

The above recipe yields 4 pieces of jelly mooncake. 


第一次做还真的有点手忙脚乱, 但是都还好出来的效果不错。 一直以来我都比较少吃传统的月饼, 因为感觉很油腻, 所以现在这个燕菜的我觉得最适合我。 而且这次的颜色都是用天然的, 喜欢火龙果带出来的鲜红色, 感觉很喜庆。 这个周末其实也做了绿茶红豆还有咖啡的口味, 全部都很喜欢, 下次再分享吧!

    1. 那个用小刀, 轻轻划几刀, 就是上面跟下面, 原因就是等下你倒入火龙果燕菜外层, 凝固后, 不会跟黑芝麻燕菜分开。

    想问一下,要等"火龙果燕菜半凝固后才放入黑芝麻燕菜, 再把剩余的火龙果燕菜倒入至满"。那请问在等的当儿,剩余的火龙果燕菜会不会凝固? 谢谢 =)
