薯泥培根面包 Mashed Potato Bacon Bread


有一段日子, 我爱上了揉面团做面包, 因为感觉面包的变化多端, 除了甜面包外, 还有土司之类的, 拿来当早餐或者下午茶最适合不过了。 所以后来为了代劳揉面团这份 ‘苦差’, 我把一架粉红色的 KitchenAid买了回来。 每每朋友来我家, 看到‘它’, 都会很好奇, 一开始大家竟然以为是架缝衣机, 真的那么像吗? 其实把它买下来之前, 我也考虑过其它牌子和比较过价钱, 但是我最后还是选择了它。 它的一切我都很满意, 只是在打面团方面会比较吃力, 但是我还是从没有后悔过。 我觉得近年来, 我很少对自己做过的决定埋怨或者后悔过, 因为我觉得既然选择了就该接受, 因为埋怨也无事与补, 不如换个心情, 转个心境, 就会发觉每件事情都会有值得学习成长的机会。 


好了, 说回这次的面包, 我应该有好久没有做面包了。 终于, 现在把以前那份热爱烘焙的心情找回来了, 所以我又很平静专心的花了一个下午把这个面包完成。 虽然需要更多的时间和耐性, 但是整个过程我都很享受, 觉得在忙碌的日子里, 还可以忙里偷闲做些自己喜欢的事情, 是幸福的。 


薯泥培根面包
(做出10个面包 )
  • 薯泥 75g
  • 高筋面粉 300g
  • 奶粉 1 + 1/2Tbsp
  • 糖 30g
  • 速发酵母 1tsp
  • 鸡蛋 1个
  • 水 70g
  • 牛油 20g
内馅:
  • 薯泥 300g
  • 培根, 切小块 70g
  • 洋葱, 切碎 1/2个
  • 溶化奶油 30g
  • 盐调味 1/2tsp
  • 胡椒粉 适量
  1. 把全部材料(除了奶油)放入容器, 揉至成柔软的面团。 
  2. 加入奶油, 继续搓揉, 直到成一个光滑的面团, 放在一旁发酵直到两倍大(大概45分钟-1个小时)。
  3. 准备馅料, 把洋葱碎和培根炒到香, 加入薯泥, 盐和胡椒粉调味, 最后加入溶化的奶油, 拌匀。 
  4. 把面团排气, 分成10份, 搓圆, 松弛10分钟。 
  5. 然后把面团擀平, 放入馅料, 再把面团包好, 放在烤盘, 继续发酵45分钟。 
  6. 抹上蛋液, 然后用剪刀剪一个‘加’的形状, 直到看到内馅。 
  7. 放入预热180'C的烤箱, 烤15分钟。 取出 待凉, 在表面刷上溶化奶油增加亮度。

(makes 10 buns)
  • Mashed potato 75g
  • Bread flour 300g
  • Milk powder 1 and 1/2tsp
  • Sugar 30g
  • Instant yeast 1tsp
  • Egg 1
  • Water 70g
  • Butter 20g
Filling:
  • Mashed potato 300g
  • Chopped bacon 70g
  • Chopped large onion 1/2
  • Melted butter 30g
  • Salt to taste 1/2tsp
  • Ground black pepper, a dash 
  1. Add all bread ingredients in a mixing bowl except butter, knead till soft dough.
  2. Add in butter, continue knead till smooth dough (dough is quite sticky), set aside to proof until double in size (around 45min to 1 hour) .
  3. To prepare filling, pan fry chopped onion and bacon till aroma. Add bacon mixture, mashed potato, salt and pepper in a mixing bowl, slowly add in melted butter, stir to combine well. (keep little melted butter for brushing later)
  4. Divide dough into 10 equal portions, set aside to rest for 10mins.
  5. Flour the work top, flatten dough into round, spoon filling in the middle, wrap and seal. Place on a baking tray. Let is proof for another 45mins.
  6. To egg wash the surface, cut a cross pattern with a sharp scissor at the middle until you can see the filling.
  7. Bake at pre-heated oven at 180c for 15mins..Remove from the pan and cool on a wire rack, brush the top with melted butter for shinning effect.  
当厨房弥漫着面包刚出炉的香味, 这就是我最喜欢和享受的时刻。 所以做面包给的满足感跟其它给于的有点不一样。 这次面包依然很柔软, 而且里头的馅料放了很多, 所以吃一个就很有满足感了。 第二天吃前再烤一下, 又有健康的自家早餐吃了。 很多时候, 生活的幸福能量, 就是来自这些微不足道的小事, 只看你是否有用心去感受而已。

    1. Yes, I actually love my Kitchen Aid although it lacks power when beating bread dough. I have a long to-do list for bread, can't wait to try all of them.

  17. I made the buns this afternoon and wondered why the bread dough didn't rise at all even after an hour and a half. I looked through the recipe again only to realize you forgot to include the 1tsp instant yeast in the English part of your recipe.

    The filling was delectable though. Thank you for sharing all the wonderful recipes and for taking the time to re-write the recipes in English. I'm a Chinese but am Chinese illiterate. Embarrassing, I know :P A follower from Melbourne, Australia.
