翻回以前的纪录, 原来我已经有半年的时间没有烘蛋糕了,真的好久噢。 这段日子其实周末都有机会呆在厨房, 但是都是煮正餐, 所以相对的可以搞烘焙的时间就减少了。 刚过的周末, 有比较空闲的时候, 就选了一个好久没有尝试, 自己又突然间很想吃的蛋糕来弄一下, 过过瘾。
绿茶车打起司蛋糕(取自星厨房)
(8“ x 8" 烤盘)
- 鸡蛋 6 个 (蛋白与蛋黄分开)
- 幼糖 100g
- 塔塔粉 1/4 tsp
- 起司片 6 片
- 鲜奶 100ml
- 牛油 100g
- 面粉 100g
- 1tsp绿茶粉 + 2tsp水 (混合)
- 起司片、鲜奶及奶油一起隔水煮溶,待凉。
- 蛋白及塔塔粉用高速打至起泡,幼糖分两次加入,打至硬及倒转盆而蛋白不会掉下来。
- 蛋黄倒入芝士糊内搅拌均匀。
- 将一半的蛋白倒入芝士糊内,用手轻轻搅拌均匀,筛入面粉,继续拌匀。
- 将芝士糊反倒入剩余的蛋白内,搅拌均匀。
- 去1/3的面糊, 加入绿茶糊, 混合, 然后和原味的面糊轮流倒入烤盘。
- 预热烤箱 150 度,隔水烘烤 60 分钟。

- Egg 6 (separate the egg white and yolk)
- Castro Sugar 100g
- Tartar powder 1/4 tsp
- Cheddar Cheese Slice 6
- Milk 100ml
- Butter 100g
- Flour 100g
- 1tsp Green powder to mix with 2tsp water till dissolved
- Using double-boil method, dissolve the cheddar cheese, milk and butter. Set aside and let them cool down.
- Whisk the egg white with tartar powder, add in the castor sugar and whisk till hard peak forms.
- Add in egg yolk into the cheese batter.
- Pour out half of the egg white into the cheese batter, mix them well.
- Sieve in the flour, mix well.
- Pour all the cheese batter into the remaining egg white, mix well.
- Mix 1/3 of the batter with the green tea paste, mix well. Pour the original and green tea batter into the pan.
- Put into preheated oven 150‘C, bake them using double-boil method for 60 minutes.
这个蛋糕是我刚开始学烘焙的时期学起来的, 只要蛋白打得好, 就不容易失败了。 喜欢这个蛋糕有淡淡的起司香味, 类似日式起司蛋糕, 吃多了也不觉得有负担。 这次蛋糕里的绿茶也是让蛋糕的外表锦上添花而已, 味道并不大。 这个蛋糕放冰箱再拿出来吃, 味道更棒的。

DeleteI like this Hsling recipe so much, but I have never tried with other flavours than the original one, hehehe.. Next time should try with other flavours.
