锅贴 Pot Stickers (Guo Tie)

以前在日本餐厅， 很喜欢吃他们的锅贴。 外皮煎得脆脆的， 跟里头湿润的馅料很搭。 但是总觉得分量不够， 吃得不过瘾。 后来学会自己做后， 就可以一次做比较多， 当天煎来吃之余， 还可以冷冻部分的锅贴。 随时要吃的时候， 稍微解冻之后煎一煎， 就可以了， 好方便。

其实锅贴的皮也可以自己动手弄， 但是我为了省掉麻烦， 就直接买现成的。 一包大概有30片， 需要250-300g的肉碎。 其它食材也很随意， 我喜欢加些蔬菜在里头， 除了可以增添口感外， 也比较健康。 这次放了胡萝卜和白菜。

 

锅贴

• 猪肉碎 250g
• 包菜、白菜 100g
• 姜 2cm, 磨碎
• 胡萝卜 1条， 切碎
• 蚝油 1Tbsp
• 酱油 1tsp
• 麻油 1tsp
• 绍兴酒 1Tbsp
• 胡椒粉 少许
• 糖 1tsp

Thermomix

1. 放入包菜、白菜 10s/sp5, 取出备用，挤压出多余的水分。
2. 放入胡萝卜 10s/ sp5, 取出备用
3. 猪肉碎加入姜碎和其它调味料， 混合， 10s/sp3, Knead 1min.
4. 加入包菜和胡萝卜碎， 10s/sp3.
5. 把1tsp的馅料， 放在锅贴皮中间， 皮的旁边沾些水。
6. 两边粘合在一起即可。

如果没有Thermomix, 可以分别把包菜和胡萝卜用食物调理器打碎， 取出跟猪肉碎和其它调味料混合至稍微起胶即可。

煎锅贴

1. 锅内热些油， 放入锅贴
2. 煎到底部稍微金黄色。
3. 加入1/4杯的水， 盖上锅盖。
4. 水稍微蒸发完后， 取出盖。
5. 稍微再煎到喜欢的颜色， 即可上桌。
6. 可以混合一些黑醋， 酱油，和麻油还有姜丝， 当沾酱。

Pot Stickers (Guo Tie)

• Minced meat 250g
• Cabbage 100g
• Ginger 2cm, grate
• Carrot 1
• Oyster sauce 1 Tbsp
• Light Soy Sauce 1tsp
• Sesame oil 1tsp
• Shaoxing wine 1Tbsp
• Some pepper
• Sugar 1tsp

Thermomix

1. Place cabbage into the mixing bowl, 10s/sp5. Transfer out and squeeze away excess water.
2. Place carrot into the mixing bowl, 10s/sp5. Transfer out.
3. Place minced meat with seasoning into mixing bowl, 10s, sp3, followed by knead 1 minute.
4. Add in cabbage and carrots, 10s/sp3. Transfer out to a clean bowl.
5. Place 1tsp of the mince mixture on the wrapper.
6. Damp the side of the wrapper with some water, and seal the fillings tightly.

How to pan fry the pot stickers

1. Heat some oil in a pan.
2. Put in the pot stickers, fry until the bottom is slightly brown.
3. Add in 1/4 cup of water. Put on the cover.
4. Lift the cover when the water is almost evaporated.
5. Fry until the bottom is golden brown in colour.
6. Serve with some vinegar, soy sauce and thinly sliced ginger.
