参巴虾米辣椒 Dried Shrimp Sambal



 
参巴虾米辣椒我试过不少食谱, 每次都尝试做一些调整, 以符合自己的胃口。 最近尝试的算最满意的一次了, 所以就赶紧把它记录下来。 这个辣椒我用加入虾米, 所以很下饭, 跟饭, 还是面类都很搭。 油的部分我用不多, 所以比较干。 所以要更美味的话, 可以增加油的部分。
参巴虾米辣椒

A:
  • 辣椒干 30g (去籽浸软备用)
  • 红辣椒 5条 (去籽切半)
  • 虾米 80g
  • 蒜头 3瓣
  • 小葱头 10粒
  • Candle nut 5粒
  • 马来栈 15g
B:
  • 油 100-150ml
Thermomix方法
  1. 把A材料放入Thermomix中, 10s/sp5-7. 如果喜欢比较细的, 可以重复。
  2. 加入油, 20min/120'C/reverse sp1.
普通方法
  1. 把A+B材料放入食物调理机打碎, 可以分数次。
  2. 把辣椒胡放入锅内, 煮滚后转中火。
  3. 慢慢炒至香即可。
Dried Shrimp Sambal

A
  • 30g Dried chili(deseeded and soaked)
  • 10 Red chili(cut half)
  • 80g Dried shirmp
  • 3 cloves of Garlic
  • 10 Shallot
  • 5 Candlenut
  • 15g Balacan
B
  • 100-150ml oil
With Thermomix
  1. Put A into moxing bowl, 10s/sp5-7, can be repeated if you prefer finer texture.
  2. Add in oil, cook 20min/120'C/reverse sp1.
Without Thermomix
  1. Put all A+B ingredients into a food processor, blend till fine.
  2. Pour the mixture into a pan with medium heat, fry untill dry and fragrance.
 
这个辣椒放入冰箱收藏, 可以耐一个月的时间。 但是通常我家的很快就消耗完, 因为真的很万用, 而且会越吃越开胃。 这个我没有另外加盐, 因为虾米应该带咸了, 如果需要可以加入少许的糖调味。
