麦片炸鸡块
- 半只去骨鸡肉, 切小块
- 牛油 5Tbsp
- 蛋黄 (过滤)4个
- 咖哩叶 3根
- 小辣椒 2个
- 麦片 适量
- 鸡肉块加入少许盐,糖,苏打粉(soda powder), Cake粉 (我用低筋面粉), 1/4 鸡蛋液腌大概半小时。(cake 粉炸出来的口感非常好,不会好像用面粉那么硬)
- 将腌好的鸡肉沾上木薯粉, 然后放入热油里炸至熟 (金黄色), 捞起, 备用。
- 准备蛋丝, 先将牛油放入锅内, 开小火, 奶油溶化后慢慢加入蛋黄, 这时要不断的搅拌, 如果觉得火候不够, 可以开中火。
- 最后加入麦片, 咖哩叶和小辣椒, 加入糖和盐调味。
- 放入鸡块拌匀即刻。
Nestum Fried Chicken
- Half de-boned chicken, cut into small pieces
- Butter 5Tbsp
- Egg yolk (filtered) 4
- Curry leaves 3 stalks
- Chili padi 2
- Nestum/oats-according to preference
- Marinate the chicken with a bit of salt, sugar, soda powder, cake flour and 1/4 egg for half an hour.
- Heat up oil for frying. Coat the chicken with a layer of tropica flour, and put into oil, fry until golden-brown.
- With another pan, with low-medium fire, melt the butter until dissolved.
- Pour in the egg yolk slowly but continuously. You need to stir the egg continuously (as shown in the picture above).
- Stir in oats/nestum, curry leaves and chili padi. May add in sugar and salt to taste too.
- Finally, mix in the chicken.
我以上写的份量也是大概而已, 所以大家可以做些调整。 奶油跟蛋黄的比例如果比较高的话, 蛋丝会比较细, 一丝丝的。 如果好像我的, 蛋黄比例比较高, 蛋丝就比较大块。
我比较贪心所以放了很多麦片, 跟蛋丝一起很好配饭。 那个蛋丝要炒到比较干后, 才加入麦片, 炒到香。 不然太早加入麦片的话, 麦片会变软, 不脆了。 这样的鸡块会让人吃了还想吃, 不过热量不低, 久久吃一次过过瘾就好了。

ReplyDelete这里怡保的餐馆也有不错的, 不过我觉得有些太油腻, 所以家里自己弄也不错。

讲真的, 不一样, 以前我用老人牌麦片, 也不一样的口感。

Have a nice vacation at Kyoto and Osaka, I guess you will have a nice full foliage, but we went Hokkaido a bit earlier, still beginning of Autumn, so leaf still look green, and we have to travel northern part to have a foliage view. Remember to go Osaka to get kitchenware..
