懒人香菇鸡饭 Mushroom Chicken Rice


转眼间, 离开圣诞节还有不到一个月的时间, 距离春节也只有少过两个月的时间, 忙碌的时候时间真的过得比较快。 而且今年无论是工作上, 还是自己的活动安排都比往年来得多, 因此现在真的想什么也不做, 什么也不想, 先休息下来。 所以这次我又找到一个非常适合懒人的食谱, 就是香菇鸡饭, 来跟大家分享一下。



懒人香菇鸡饭

份量:1人份
  • 白米 1/2杯(洗净沥干备用)
  • 水 1/2杯(我用浸泡香菇的水)
  • 鸡腿肉 100克
  • 香菇 2朵(用水浸泡至软,沥干切片)
  • 蒜头 2瓣(剁碎)
  • 姜 4片
  • 青葱 1根(切粒)
腌料:
  • 蚝油 1 1/2茶匙
  • 酱油 1 1/2茶匙
  • 芝麻油 1茶匙
  • 黑酱油  1/2茶匙
  • 胡椒粉 少许
1. 将鸡腿肉去骨,切成小块,用腌料腌制至少1个小时。
2. 热锅加入少许油,爆香蒜米碎和姜片,然后加入香菇炒香。
3. 把腌好的鸡肉放入,炒至鸡肉变色后加入白米拌炒。
4. 倒入1/2杯水,用大火把水煮滚,把锅盖盖上,转小火煮大约10至13分钟至饭熟(如果用饭锅的话,水滚后把米和料放入饭锅煮至熟即可)。饭熟了后,继续放在炉上加盖焖大约10分钟,食用前撒上葱花即可。


Mushroom Chicken Rice
(portion for one)
  • 1/2cup rice
  • 1/2 cup water
  • 100g chicken breast fillet
  • 2 chinese mushroom (soak in water and cut into slices) 
  • 2 cloves garlic (chopped)
  • 4 pieces ginger
  • 1 spring onion (chopped)
Marinate:
  • 1/2tsp oyster sauce
  • 1/2tsp soy sauce
  • 1 tsp sesame oil
  • 1/2tsp dark soy sauce
  • Pinch of pepper
  1. Cut the chicken breast into pieces and mix with the marinates for at least one hour.
  2. Heat oil in pan, fry garlic and ginger till fragrant, add in mushroom and continue frying.
  3. Add in chicken, fry till the chicken started to change colour, add in the rice.
  4. Pour in 1/2 cup of water, heat till boil,  then pour all into the rice cooker and cook.
  5. Spread some chopped spring onion before serving.

我是用饭锅的,所以基本上蛮简单的, 很快就有香喷喷的饭上座了。 只是我觉得不懂是不是我的水的份量控制不好, 所以饭比较软, 我比较喜欢煮出来一粒粒的饭, 下次再尝试好了。 不过这个食谱我还是很满意, 味道刚刚好, 而且又吃得饱, 喜欢!
