不过坦白说, 这个蛋糕面包真的好费时费力,就是要先弄好面包, 再等发酵, 然后再要送进烤炉之前, 把蛋糕糊准备好。 时间方面要掌握得好, 不然可能会出现面包发酵过度还是蛋糕糊消泡的问题了。
食谱: (改编自蓝赛珍‘我会烘焙’)
面包材料:
- 高筋面粉 200g
- 可可粉 1 1/2tbsp
- 盐 1/2 tsp
- 细糖 70g
- 水 140ml
- 即溶酵母 1 tsp
- 牛油 40g
- 把面粉, 可可粉, 细糖,盐,即溶酵母,水放入面包机, 搅拌成团,继续搅拌成光滑的面团。
- 加入奶油继续搅拌, 至到可以拉出透明薄膜的面团。
- 面团放入容器盖上保鲜膜, 进行基本发酵, 大概一个小时。
- 再次压按面团及揉至光滑, 休面15分钟。
- 把面团擀成长片, 紧紧地卷起, 放入面包长盘里, 让它发酵至双倍大。
A:
- 面粉 20g
- 蜀粉 20g
- 细糖 30g
- 蛋黄 3个
- 粟米油 30ml
- 浓班兰汁 30ml
- 蛋白 3个
- 塔塔粉 1/2 tsp
- 细糖 30g
- 将A材料混合均匀。
- 将蛋白加入塔塔粉, 打发。 慢慢加入细糖, 直到硬性发泡。
- 将(1)和(2)的材料用刮刀混合一起, 记得不要搅拌过度。
- 把蛋糕糊倒入发好的面团上, 送入预热180'C的烤炉, 烤大概30-40分钟。
班兰蛋糕的部分很柔软, 不过我好像烤不够久, 有点湿, 烤得比较干应该会更好。 感觉跟外面的有点不一样, 但是说不出差别在那里。
做这个面包蛋糕, 我竟然忘记了铺上一层油纸, 导至要拿出来的时候就很难了, 所以整个面包蛋糕给我弄到不像样了。
不过这个蛋糕面包也很不错, 一口面包, 一口蛋糕, 还蛮有味道的。 面包和蛋糕互相衬托, 才有这样美丽的效果。
其实吃蛋糕, 我最喜欢吃表面那层, 很有味道。
yeah, i like to eat this kind of bread too, very soft and nice, i usually will buy chocolate orange flavor. Last time Micardis (Boehringer) gave us few loaf of 'bread cake' as gift, i dunno how it links to Micardis. ><
