6个1 の 牛奶烤鸡腿 Chicken in Milk and Cream


11.11.11 :) 这个特别的日子对你有特别的意义吗? 呵呵, 这个难得的6个一的日子, 是这个世纪才有的, 想不到今年的光棍节竟然变得那么特别的日子。 所以, 我一定要这天写帖子来‘同庆‘一下! 其实啊, 今天对我来说是最平凡不过的日子, 记得今早可爱的同事们还在早上时间的11点11分, 传了幸福的简讯给自己的另一半, 很甜蜜! 我呢, 我在那一分钟, 应该是在跟病人说话, 呵呵。 如果大家在那特别的时段忘了做些什么, 没关系, 还有晚上的11点11分, 最后一次的机会。 我那时候应该也会在对着病人, 因为今晚是当晚班的, 很有‘意义’的一天!  :)




好了, 特别的日子, 介绍特别的菜肴。 自从在Wendy那边看到她的这道Chicken in Butter and Cream, 我又被吸引人, 因为她形容到太美味了。 不过这道烤鸡的最大功劳是sage, 所以很幸运的在超级市场被我找到了它的影子, 这样简单的东西, 又让我开心了很久:)

牛奶烤鸡腿 Chicken in Milk and Cream (食谱来自Jamie Oliver, 从 Table for 2.....or more看来的)
  • 鸡腿 3块
  • 盐 1/2Tbsp
  • 胡椒粉 适量
  • 牛奶 1杯
  • 鲜奶油 1/4杯
  • 蒜头 6瓣
  • 柠檬削 1Tbsp
  • Sage 2小棵
  • 肉桂条 2inch(我用肉桂粉取代)
  1. 先用盐和胡椒粉抹在鸡腿上, 腌制30分钟。
  2. 在锅上热油, 鸡皮向下, 稍微煎到皮变成金黄色。 
  3. 把鸡腿放入四方烤盘 (烤盘不能太大)。
  4. 把牛奶, 鲜奶油, 柠檬削和Sage混合, 倒入鸡腿的烤盘。 把蒜头块放入。 
  5. 放入预热180‘C-200'C的烤箱, 烤大概50分钟到一个小时。 
这个就是sage的模样。 

 送入烤箱之前。 很特别吧, 牛奶拿去烤鸡, 也能那么美味。

这个烤鸡跟之前的很不一样, 因为多了Sage的味道。 Sage的味道很独特, 很难形容, 但是它却是这个烤鸡的主角, 所以不要用其它的香草来取代。 除了sage的特别外, 牛奶和鲜奶油烤出来后, 会随着水分的蒸发, 变成有如起司口感的汁, 很好配饭。 

我觉得我的烤不够久, 因为汁没有那么浓, 不过那个sage的香味我很喜欢,  烤过的牛奶有点像吃豆腐, 但是有乳酪的味道。

  9. Bee Bee, nice ho! Actually I was unsure whether it's time to take out the chicken or not that day because I'm over worried that the sauce might dried up till 'kosong'! Next time if I were to bake again, will let it be in the oven for a longer period.

  14. The gravy will still be soupy, but there will be a layer of "curd" formed after baking, once you removed that layer of curd, the "soup" is down there, perfect for drenching anything.

    Wendy, oh, if the gravy will still be soupy, then mine should be considered correct also. It did form a layer of curd on top and with soup down there. Really love this because I can finish a whole bowl of rice just with this dish, hehe.

  24. sounds like sage is really an essential item here for the authentic taste! i did nothing special yesterday but there was a moment when i glanced at my watch, it was 11:11, i shld have made a wish myself!!

  25. Lena, the flavour of sage in this dish can't be substituted with other herbs. Yeah, yesterday I did make a wish for myself at 11.11am, hehe :)
