周末开饭了之‘黑醋烧鸡腿’ Braised Chicken Drumstick with Vinegar


其实我算还蛮喜欢阳光的一个人, 我喜欢到海边, 喜欢有蓝天和白云。 但是近来的天气真的炎热得无法形容,开了冷气也好像于事无补,还是一样的热。 再加上烟霾的问题一直还在, 这样的生活素质真的让我大皱眉头。 因为这种天气, 又挑起了我想去海边的冲动, 工作一直在忙不停, 好想立刻渡假去呢。

再次取自小小米桶的食谱, 这个算最省时间的一道了, 不用预先腌制鸡肉, 直接放进去锅里头焖煮就完成了, 所以我时间不够用都会想起这道不需要太多功夫的菜肴。



黑醋烧鸡腿 (取自小小米桶的零油烟厨房)
  • 鸡腿 3个 (原本食谱是用鸡翅)
  • 姜 2片
  • 蒜头 2瓣
  • 辣椒 1/2根
  • 水煮蛋 2个
调味料
  • 香醋 5Tbsp
  • 酱油 3Tbsp
  • 绍兴酒 3Tbsp
  • 冰糖 1 + 1/2 Tbsp
  • 八角 1个
  • 水 100ml
  1. 将鸡腿放入滚水中川烫, 捞起备用。 姜切片, 蒜头切片, 辣椒去子, 备用。 
  2. 取一锅, 放入做法 (1) 的鸡腿, 姜片, 蒜片, 辣椒, 水煮蛋以及调味料, 盖上烘培纸或铝箔纸做成的盖子, 大火煮滚后转小火闷煮越15分钟, 即完成。
*将烘培纸或铝箔纸做成的盖子, 盖在鸡腿上面, 帮助均匀入味。

 Braised Chicken Drumstick with Vinegar
  • Chicken drumstick 3
  • Ginger 2 pieces
  • Garlic 2 cloves
  • Chilli 1/2
  • Hard boiled egg 2
  • Black vinegar 5Tbsp
  • Soy sauce 3Tbsp
  • Shaoxin wine 3Tbsp
  • Rock sugar 1 + 1/2 Tbsp (I replaced this with castor sugar)
  • Star anise 1
  • Water 100ml
  1. Boil  a pot of water, when it is ready, put in the chicken drumsticks, allow them to boil for around 5 minutes, remove chicken from the pot.  Chop the ginger, garlic and chili into pieces.
  2.  In a pot, put in the chicken drumsticks, ginger, garlic, hard boiled egg, water and the other seasoning ingredients. Cover with  a piece of aluminum foil on top (this helps to maintain the aroma of the dish). Use high heat till they start to boil and reduce to low heat and continue for around 15 minutes. 

厉害吗, 只有两个步骤, 省去煎炸爆炒, 这样的烹饪方式更健康吧。 其实香醋的味道烹煮过后会减少, 所以吃的时候只吃到微微醋的香味。 我最喜欢的还是那个水煮蛋, 这样闷煮过后, 有醋的酸味和甜味, 很下饭。我比较常用鸡腿来做菜, 因为家人都比较容易接受, 而且烹调时间也没有很长, 周末的时候花点心机, 就可以开饭了, 所以简单的事情也可以很好, 只要你懂得珍惜.

  9. Hi Min, thanks for sharing this recipe. I tried and my hubby likes it. I like it too especially with the easy preparation and cooking. Sure will cook this often cos' I love any dish cooked with black vinegar, hehehe!
