玉米满分 Kenny Rogers' Corn Muffins


好几年前, 当我住的城市还没有 KG的时候, 可以吃到它的时候, 算是多么开心幸福的事情, 尤其是它的满分, 更让我吃得津津有味。 后来, 它的分店开多了, 很容易就可以找到的时候, 反而觉得对它的喜欢渐渐少了。 生活中很多小事大事都是这样, 越难得的就会更珍惜, 但是日子久了, 当一切已成为习惯, 很多事情就被理所当然了。 所以我一直都在学习, 学习如何在平凡的日子中, 还是抱有一颗感恩惜福的心态, 是有点不太容易, 但是还是需要踏出第一步。


玉米满分
(可做出12个马芬)
  • 奶油 (软化)125g
  • 细糖 80g
  • 蜂蜜 1/4杯
  • 鸡蛋 2个
  • 盐 1/2tsp
  • 面粉 200g
  • 发粉 1tsp
  • 玉米面粉 (Yellow cornmeal) 3/4杯
  • 牛奶 1/2杯
  • 玉米粒 (我用罐头玉米粒) 3/4杯
  1. 用电动搅拌器, 把奶油, 细糖和盐搅打至颜色变浅, 均匀。 
  2. 分次加入蜂蜜和蛋液, 搅拌均匀。
  3. 筛入面粉和发粉, 再拌入玉米面粉和牛奶。 (粉类和牛奶可以交替加入)
  4. 最后放入玉米粒, 拌匀。 
  5. 面糊放入烤杯, 再放入预热180‘C的烤箱, 烤大概25分钟。

  • 125g butter, softened 
  • 80g caster sugar
  • 1/4 cup honey
  • 2 eggs
  • 1/2 tsp salt
  • 200g all-purpose flour
  • 1 tsp baking powder
  • 3/4 cup yellow cornmeal
  • 1/2 cup milk
  • 3/4 cup frozen yellow corn ( I use corn kennels in tin)
  1. Cream together butter, sugar and salt in a mixing bowl till light and creamy.
  2. Add honey and egg, combine well.
  3. Add flour, cornmeal and baking powder and blend thoroughly.
  4. Add milk while mixing.
  5. Last add corn to the mixture and combine until corn is worked in.
  6. Grease a 12 cup muffin pan and fill each cup with batter.
  7. Bake at pre-heated oven at 180'C for 25minutes. 
 
记得很久以前我有尝试过另一个玉米满分的食谱, 不过那个是个失败之作, 所以没有放上来分享。 所以很开心这个满分出来很成功的样子,个个都发得开口笑了, 看了心情也好起来。 这个食谱虽然没有完全跟原版的一百分的相似, 但是却可以找回那种很玉米的味道。 而且加了玉米面粉,也增添了一些口感,这个满分我喜欢, 又机会再做 。 其实要做这个食谱也有一段时间了, 但是一直找不到玉米面粉,  后来是Joceline送上了玉米面粉, 我才有机会尝试这个满分, 要大大力的谢谢她了。

    1. Hi Grace, cornmeal is a meal ground from dried maize or corn, usually can be bought from baking ingredient shop. Here is a picture of it,

  6. I have seen this from Sonia some time back. Wanted to bake this buy yet to look for the cornmeal. You baked so well and beautiful in this Con Muffins and the photos looks so wonderful.

    有时候会特地到那里买一盒回家慢慢享受,呵呵。

  13. Sorry can I ask you a question that why this recipe contains too much butter? In other muffin recipes I found that it only needs a little amount of fat (usually oil), will this amount of butter turn the muffin into a kind of cupcake?
    I have just started to bake so please excuse me if my knowledge is wrong :)

    1. This muffin recipe uses creaming method, and it's more moist compared with the normal muffins, thus, the percentage of butter is a bit higher :)
