翻糖大理石杯子蛋糕 Fondant Marble Chocolate Cupcakes


之前有了翻糖的初体验后, 这次是真正的交功课了。 这些翻糖杯子蛋糕是给妹妹做的结婚晚宴的蛋糕。 所以一次过准备了大概一百个, 所以对我这个菜鸟真的是一个考验吧。 因为要做的数量不少, 因此选了一个比较简单的食谱, 成功率也比较高。
 

翻糖大理石巧克力杯子蛋糕
-做出12个杯子蛋糕
  • 奶油 150g
  • 细糖 150g
  • 鸡蛋 3个
  • 自发面粉 200过
  • 牛奶 2Tbsp
  • 苦甜巧克力 (溶化) 55g
  1. 用电动打蛋器把牛油, 细糖拌匀, 慢慢加入蛋液和牛奶, 最后筛入面粉, 拌匀。
  2. 把面糊分成两份, 其中一份加入溶化巧克力, 拌匀。
  3. 用汤匙把两份面糊交替放入杯子中。
  4. 放入预热180‘C的烤箱, 烤大概25分钟。

*makes 12 muffin size

  • 150g soft margarine (or replaced with butter )
  • 150g caster sugar
  • 3 eggs (medium)
  • 200g self-raising flour
  • 2tbsp milk
  • 55g semisweet chocolate, melted
1. Using a handheld mixer, beat together margarine, sugar, eggs, milk and flour until just smooth.
2. Divide the batter between 2 bowls. Add the melted chocolate to one bowl and stir until well mixed.
3. Using a teaspoon, and alternating the chocolate batter with the plain batter, fill ¾ full of paper case.
4. Bake the cupcakes in a per-heated oven at 180'C for 25mins, or until well risen and springy to the touch.
5. Transfer to a wire rack and let cool.



这次的翻糖造型也不一样了, 一共用了三种颜色, 没有那么单调。 这次也把杯子蛋糕的表面切平, 这样就比较容易铺上翻糖了。 感觉上这次的蛋糕体油的份量比较高, 所以油份有点渗透到杯子的外面, 因此多多少少影响到杯子的美观, 算唯一的美中不足吧。 不过做一口气做了100个杯子蛋糕, 还是第一次, 是很好的挑战和经验。 下次有机会再来玩玩不同的造型, 真的蛮有趣的。
