鸡肉烧卖 Chicken Siu Mai


虽然怡保的点心鼎鼎有名, 但是我也没有太常去吃, 因为通常周末出名的那几间都人山人海, 我又缺乏少许的耐性等位子, 所以我都会选择放弃。不过有些点心店晚上也有营业了, 所以现在在怡保要吃到好吃的点心也没有太难。 众多的]点心当中, 最喜欢’芋角‘了, 但是它的做法还真的不简单, 所以这次还是选做了比较简单的烧卖。 



鸡肉烧卖
  • 去骨去皮鸡腿肉 226g
  • 虾 去壳切成小块 8只中型
  • 胡萝卜 半条切粒
  • 姜 切碎 1/2Tbsp
  • 麻油 1/8tsp
  • 胡椒粉 3小撮
  • 鸡精粉 1/4tsp
  • 粟粉 1/2Tbsp
  • 蛋白 1/2Tbsp
  • 盐 小撮
  • 云吞皮
  1. 用食物搅拌器把鸡肉搅烂。 和其它材料和调味料混合均匀, 放入冰箱20分钟。
  2. 把一汤匙的鸡肉放在云吞皮上, 再把边围折好, 上面撒上红萝卜碎。
  3. 放入蒸炉, 蒸大概10分钟即可。

  • 1/2 lb chicken thigh (deboned and skinless)
  • 8 medium shrimp (peeled, deveined, and diced into small pieces)
  • 1/2 carrot (diced)
  • 1/2 tablespoon finely chopped fresh ginger
  • 1/8 teaspoon sesame oil
  • 3 dashes white pepper
  • 1/4 teaspoon chicken bouillon powder
  • 1/2 tablespoon corn starch
  • 1/2 tablespoon egg white
  • A pinch of salt
  • Round wonton skin
  1. Using a mini food processor, ground the chicken but make sure that it’s coarsely ground. 
  2. Mix the chicken with other ingredients and seasonings and set aside in the fridge for 20 minutes.
  3. Place about a tablespoon of filling on each wrapper, gather up the sides and leave the center open. 
  4. Garnish the top with some chopped carrot and a pea. 
  5. Steam in a bamboo steamer for about 10 minutes. Serve hot.

因为平时都较少吃猪肉, 所以这次选做鸡肉的, 口感也不错, 没有太油腻的感觉。 整个过程也没有汰复杂, 只是包烧卖的时候真的有点难度, 有些被我弄得畸形了, 但是吃下去也是一样美味。 我用的云吞皮是正方形的, 因此要用之前得要把它们剪成圆形。 这个烧卖也多做了一些冷冻, 妹妹说平时可以放入微波炉叮热当午餐吃, 这样也算不错的选择, 很方便。

  4. 烧卖我喜欢! 不过不知为什么每次蒸了后不久烧卖皮会变硬呢? 可以指点吗?

    1. 你蒸之前先喷些水, 然后出炉后最后不要吹到风, 不然皮会很快变硬。
