Cornflake Cookies

  • 1/2 tsp grated grind of lemon or orange
  • 1/2 tsp vanilla essence
  • 1 egg yolk
  • 1 tbsp
  • 110g butter
  • 110g castor sugar (I reduced to 90g)
  • 1/2 tsp grated grind of lemon or orange
  • 1/2 tsp vanilla essence
  • 1 egg yolk
  • 125g self-raising flour
  • 1 tbsp corn flour
  • 100g corn flakes, crushed
  1. Cream butter and sugar till smooth, add in vanilla essence.
  2. Add in egg yolk and lemon grind and continue to beat till smooth.
  3. Shift in self-raising flour and corn flour, mix well to make it into a dough.
  4. Keep the dough in refrigerator for half and hour.
  5. Use one teaspoon of dough and make it into a small ball and coat it with corn flakes, and put into small paper cup.
  6. Bake in preheated oven at 150'C for 25 minutes.

    2. Joo: You can try also, but cut down the sugar, it's nice :)

    3. Min,

    15. Hi Min
Wanted to try this recipe this weekend.
Is corn flour same as potato flour?
Sorry. . I am just a beginner on baking.

      1. Hi, they are not the same. You can use corn starch if corn flour is not available. Happy Baking!

      3. Hi Min
Just finished baking this cookies... but think I made the ball too big... after baking they all 'sink'. Those small ones are look better.

      4. Sink ah? How come? Are you using self-raising flour or normal flour? I don't think it is problem with the size.

      7. Hi Min

Just made another batch today but in smaller size and they are ok. My children just love popping them into their mouth.

    16. Hi I just made these cookies using your recipe. The cookies are very yummy but I don't know why they don't look as good as yours. Mine collapsed in the middle after they are baked, unlike your perfect looking ones. Any idea why that happened??

    17. Hi, thanks for sharing the recipe! But what is the grated grind of lemon or orange?

      1. Esin, you can use a grater with fine holes and carefully drag the lemon/orange across the surface and make sure to only grate the top bright yellow peel and not the white pith underneath.
