香脆玉米饼干 Cornflake Cookies

 

近来有一个新的习惯, 就是喜欢在晚上才开始烘培, 然后第二天早上才用早上的自然光来拍照片, 感觉效果会比较好。 再加上喜欢晚上的宁静, 可以让自己静下心来, 用心的做, 不用跟时间赛跑, 是会更有满足感的。 所以我喜欢周末, 喜欢不用上班的日子, 喜欢做让自己开心的事情, 很简单的, 但是我很知足了。



这个饼干是我收藏了很久的食谱, 那天在烘培店看到有卖粟米片,  就让我想起这道饼干。 感觉上做饼干好像比做蛋糕容易很多, 成功的机率也比较高, 但我除了为了新年, 其他时间都比较少弄饼干。



食谱
  • 110g 牛油
  • 110g 细糖 (我只用90g)
  • 1/2 tsp grated grind of lemon or orange
  • 1/2 tsp vanilla essence
  • 1 egg yolk
  • 125g 自发面粉
  • 1 tbsp 玉粟蜀粉
  • 100g 玉米片, 稍微压碎
  1. 用搅拌器把牛油, 细糖和 vanilla essence 搅匀, 至到颜色变浅。
  2. 加入蛋黄和 lemon grind, 继续搅拌。
  3. 最后筛如粉类, 拌匀。
  4. 把面糊放入冰箱冷藏半个小时。
  5. 用一小匙的面团揉成小团, 放入玉米片碎里,沾上玉米片碎, 再放入小纸杯。
  6. 全部完成后,放入预热 150‘C的烤箱烤大概25分钟。 
  • 110g butter
  • 110g castor sugar (I reduced to 90g)
  • 1/2 tsp grated grind of lemon or orange
  • 1/2 tsp vanilla essence
  • 1 egg yolk
  • 125g self-raising flour
  • 1 tbsp corn flour
  • 100g corn flakes, crushed
  1. Cream butter and sugar till smooth, add in vanilla essence.
  2. Add in egg yolk and lemon grind and continue to beat till smooth.
  3. Shift in self-raising flour and corn flour, mix well to make it into a dough.
  4. Keep the dough in refrigerator for half and hour.
  5. Use one teaspoon of dough and make it into a small ball and coat it with corn flakes, and put into small paper cup.
  6. Bake in preheated oven at 150'C for 25 minutes.
     


    这也算很简单的一个饼干, 做法直接, 而且我喜欢脆脆的玉米片。  不过这饼干对我来说有点太甜了, 虽然我减了糖的分量, 还是蛮甜,  所以下次如果在做的话, 糖的部分可以再减。

      安妮: 我觉得用自然光拍照最美, 有时遇到雨天或阴天就比较麻烦啦, 怎样拍都拍不出那种效果, 好纳闷。

      和你一样,平时比较少烘饼干,因为家里没有人捧场,加上老妈一直说饼干燥热,不要让我家哥哥吃那么多。所以乘新年打算大烤特烤。。。哈哈

      类似这样的饼干我也做过,可是没你做得那么美!^^

    7. 鱼头:自然光真的是最好的, 照片后期也不用怎样修饰也可以很美的, 所以我喜欢早上或者中午拍照。

    11. 对啊,我也一样。晚上把糕点烘好,第二天拍照。但是如果是菜肴烹调就不行咯。。总是匆匆忙忙,担心拍照摸索太久,菜凉了又得吃冷菜。。。:(

      Is corn flour same as potato flour?

      1. Hi, they are not the same. You can use corn starch if corn flour is not available. Happy Baking!

        Just finished baking this cookies... but think I made the ball too big... after baking they all 'sink'. Those small ones are look better.

    16. Hi I just made these cookies using your recipe. The cookies are very yummy but I don't know why they don't look as good as yours. Mine collapsed in the middle after they are baked, unlike your perfect looking ones. Any idea why that happened??

      1. Esin, you can use a grater with fine holes and carefully drag the lemon/orange across the surface and make sure to only grate the top bright yellow peel and not the white pith underneath.
