香味逼人之 '蒜香面包结' Garlic Knots


近来有好多东西要买, 其中一个就是KA mixer了。 在怡保选择不多, 只有一个地方找得到, 价钱比我在槟城看到的便宜, 不过却没有我喜欢的粉红色。 其实要想拥有一个KA mixer好久了, 只是一直都还没有特地去留意。 直到现在, 有些忍不住了, 好想买一个回来。 因为用了两年的面包机功能不是太好, 面团打了两轮, 也打不好, 所以我想如果有KA的话, 应该会简单很多。


因为烤箱不够大, 所以分两次烤, 第二次的放入以前买的蛋糕烤盘, 先拿来烤面包用,因为不沾的, 很好用。 

这次舍弃了面包机, 面团我是用手揉的。 一大早揉面团, 是个很好的运动, 近来天气好热, 做个面包也害我流下不少的汗水, 呵呵, 虽然听起来好像很辛苦, 不过只要享受那个过程, 哪怕多辛苦, 也都是值得的。 


这个蒜香面包结, 先是从Rasa Malaysia那边看到, 后来发觉 My Kitchen Sinppets也有做过类似的, 被他们美丽的照片吸引住了, 而且大家的评语的很好, 所以就觉得是不可错过的食谱了。 因为这里我找不到现卖的比萨面团, 所以我就从做面包开始。 

可以把结的头尾收去下面, 就可以有不同的形状了。

蒜香面包结 (参考自 White on Rice Couples) *可以做出 20个面包结*
  • 温水 210ml
  • 橄榄油 28ml
  • 海盐 1/2 tsp
  • 细糖 1/2Tbsp
  • 速发干酵母 1/2 Tbsp
  • 高筋面粉 375g
蒜香酱
  • 橄榄油 15ml
  • 奶油 15g
  • 蒜头 2瓣
  • 新鲜巴西利碎叶片 2Tbsp
  1. 把温水, 橄榄油, 盐, 糖放在一个大碗混合, 加入面粉和酵酵母, 混合一起成团。 
  2. 稍微搓揉直到面团光滑 (其实我不懂这个面团要不要搓到薄膜, 所以我大概搓了15分钟而已)。
  3. 让面团发酵1个小时或双倍大。
  4. 把面团放在已经抹了油的工作台上。然后把面团擀成5"x16", 1/2"厚的方形。 然后切成1/2"x5"的条形。 
  5. 再帮每个面条打一个结, 进行第二次发酵, 直到双倍大。
  6. 放入预热 200’C的烤箱, 烤大概12-15分钟。
  7. 准备, 蒜香酱。 稍微加热橄榄油, 牛油和蒜头碎, 加入巴西利碎叶, 备用。 
  8. 取出面包结后, 放入一个大碗, 再倒入蒜香酱, 让它们混合一起, 确保每个面包结都有沾到蒜香酱。 (另一个方法就是用刷子, 为每个面包结刷上蒜香酱, 不过我比较喜欢前者, 感觉过程比较有趣)。 
 刚出炉的裸体面包结, 我的烤不够久, 所以不够上色, 有点可惜。 

沾上蒜香酱是不是美丽很多?


这个面包结的口感就是有点像批萨的口感, 外表因为有抹到橄榄油, 所以是香脆的, 而里头虽然有点嚼劲, 但是还是很松软的。 喜欢面包新鲜出炉,每个都沾有蒜香酱, 趁热吃, 真的会吃上瘾的。 当初还担心做出20个面包结会不会吃不完, 想不到你一个, 我一个, 一下子就吃完了, 看到它的魅力了吗? 

这次做的一下子就消耗完毕了, 下次要再做, 真的很喜欢。

  6. Wendy, 我觉得这也是大人喜欢的, 小孩通常都不喜欢, 或者你可以减少蒜头的份量, 加一点起司, 也一样好吃。

    There's one shop in Ipoh that gives quite good deal for KA.
    It even carries the Pro500 model, which is lift bowl, not the smaller tilt head version that Wah Seng has.

    那天烘焙店有介绍我哦,很多颜色,看得我也心痒痒的,因为发觉面包机打出来的面团很难拉出薄膜。

  25. 我的 KA 到现在都还没有拿来搅面团,因为我朋友吓我说 KA 用来搅面团会“伤”到 KA,所以我都还是在用面包机搅面团
