开心乐龙龙の龙饼 Dragon Cookies


倒数7天, 就是春节了! 今年的春节来得特别早, 刚忙完工作上的事情, 都还没有真正地去准备。 其实今年的春节, 我最期待的除了是能跟久违的亲戚朋友见面, 我更希望可以好好的给自己放一个长假。 自从去年从北泰回来后, 我好像都没有放过长假了, 就一直很努力的工作, 我也真佩服自己的耐力。 所以这次我真的想放下工作, 好好的过年了。




Sonia那边看到龙饼, 即熟悉又陌生。 因为它是我刚懂烘焙的初期, 学做的年饼。 那时候看到食谱的材料和做法不复杂, 所以就选了龙饼来做。 记得那时候出来的成品还不错, 对那时候的我来说是种满足感。 


龙饼 (取自张莉婵的蛋糕西点自己做)
(A)
  • 牛油 150g
  • 糖粉 150g
  • 蛋黄 2个
  • 蛋白 1个
(B)
  • 粟粉 300g
  • 奶粉 30g
  • 面粉 60g
  • 香草精 1/2tsp
  1. 将(A)料搅打至幼滑, 筛入(B)的粉类, 加入香草精, 拌匀成团。 
  2. 放入挤花袋挤出花样。
  3. 放入预热150‘C的烤箱, 烤大概15分钟。

  • Butter150g
  • Icing sugar 150g
  • Egg yolk 2
  • Egg white 1
(B)
  • Corn flour 300g
  • Milk powder 30g
  • Plain powder 60g
  • Vanilla essence 1/2tsp
  1. Beat (A) till creamy, sieve in (B) and add in vanilla essence.
  2. Form into a dough. 
  3. Put into pipping bag and press out the desired pattern.
  4. Put in preheated oven at 150'C for 15 minutes. 

不过我这个食谱, 比起Sonia的, 粉类比较高, 所以面团比较硬。 因此, 我为了龙年而挤出的龙饼, 还真的吃了不少苦头。 因为这些龙饼, 我弄破了好几个挤花袋, 没有夸张的。 所以我做了一半的龙饼, 其它的我都只是大概挤成花型, 我真的没有那股力气。


出来的成品还算满意, 有点像龙, 又有点像蛇。 本来要为龙点睛, 但是家里没有红色的色素, 又不想为了这次的龙饼买整罐色素, 所以最后我帮龙饼们, 放了蔓越莓眼睛, 好像也不错, 有3D的感觉!

有时我喜欢背光拍照, 比较有感觉。

  4. These look very pretty. A true labour of love. Go for a hand spa treatment after this.
    I think one needs to use those plastic piping stuff, hmmm.. they look like pumps. The pushed in type, not the squeeze handle type.
    Even piping choux pastry can break a few plastic piping bags, I'm sure this will break even more. Double or even triple!

    1. Yeah, I would like to have a good hand spa and massage too! Actually I've those pumps you mentioned but I'm too lazy to take them out, so I ended up spoiling a few pipping bags lo.

Hahaha, these look exactly like the 1st one i tried, nice shape but taste a bit hard and crunchy but not melt-in-mouth type..You can not use the normal plastic piping bag but need to use those thick cloth type of piping bag. I like your idea of using cranberry to do the eyes, look real like a dragon!!

    1. Yes, they are more to those crunchy type instead of melt-in-mouth. Actually I know I need to use thick type of pipping bag but that time I only have those normal ones, I got no choice. So ended up, I kept changing the pipping bags, very tedious job.

  18. HI Min, I was blog hopping and chanced upon your recipe. I also done this recipe but I wasn't like you so patient. I ended up making them into buttons. It was definitely tough piping it out. I hope I can find an easier to pipe recipe next year. :)

    1. Edith, it's really a tough job pipping out those cookies, I wasted a few pipping bags for that. I made half into dragon shapes only, the others I just simply shaped into round, haha. I should try another recipe next time.

  19. 嗨,我想问是不是牛油和糖连鸡蛋一起直接打呢?还是牛油和糖先打然后再加蛋?还有那个texture应该是粘的还是不粘的?为什么我做出来的形状都固定不了,会塌下来?

  20. 牛油和糖打发后, 慢慢分次加入蛋液, 搅拌均匀就可以了. 那个texture是不粘的噢。 你的是烤后蹋下来吗?

  21. 你好我想问你牛油要隔水煮融再打吗?要打到什么程度!是要用电动打蛋器打的吗

    1. 不用哦, 牛油冰箱拿出来, 稍微软化后, 就可以跟糖打至比较白, 然后加入蛋液打到混合就可以了, 都是用电动打蛋器的。
