家常菜之‘焗香蒜小鸡腿’ Roasted Chicken Drumsticks with Garlic and Sweet Potato


消失了一个星期, 我又回来了, 这个月我写的篇数真的少得可怜。 其实我真的不想的, 一个月里头就食物中毒两次, 泻肚子就已经弄得我什么胃口也没有了, 所以更不用想我会做什么烘焙, 真的没有那个心情。 而这个家常菜也是我很勉强煮出来的, 因为一个人在家, 再不动手, 会饿死的。 

在Christine那边找了一个最简单的食谱, 轻轻松松就可以准备好, 而且觉得这道菜肴, 我觉得有点适合生病的人吃。 因为我看了其它的食谱都没有胃口, 反而这个我还可以接受。 



焗香蒜小雞腿 (取自简易食谱

  • 有機小雞腿 (organic drumsticks)6隻 約680克
  • 紫洋蔥(切四份) 1/2个
  • 橄欖油 2Tbsp
  • 海鹽 适量
  • 胡椒粉 适量
  • 蒜頭 兩整個
  • 新鮮迷迭香(rosemary)4棵
  • 紅番薯(切片)1个
  • 白酒醋(white wine vinegar)2Tbsp
  • 雞湯 1/4杯
  1. 預熱焗爐至 200‘C (392F).
  2. 小雞腿用水洗凈,瀝乾水份。各面灑下酌量的海鹽和胡椒粉。在番薯片中加少許橄欖油和鹽拌勻。蒜頭不用去皮,分散各瓣。
  3. 燒熱油鑊,用中火把雞腿各面煎至微黃,約 5分鐘。
  4. 在一焗盤中,隨意鋪上番薯。上面放雞腿。加蒜頭,迷迭香和洋蔥。放入焗爐,焗約 15至 20分鐘,直至雞腿剛剛熟透(可切開雞腿一小片,看看雞肉轉白色,即熟透)。切勿焗太久,否則太乾。要保持肉汁多。
  5. 拿出焗盤,小心地把雞腿,番薯和洋蔥夾出,放在一暖碟上,蓋好。仍然留蒜頭在焗盤中(如喜歡的話,此時把蒜頭去皮。囡囡就很用心,把每瓣蒜頭去 皮。熟了的蒜頭很容易去皮的。而且可以吃)。把焗盤放在爐上,倒進雞湯,用中火煮滾(煮開)。刮刮盤底和週邊(那是好好味道的材料啊!不要浪費呢。)加 醋,繼續煮至汁收乾些,及濃稠些。淋在雞腿上,即成。
Roasted Chicken Drumsticks with Garlic and Sweet Potato (Adapted from Christine's Recipe)
  • 680 gm organic drumsticks
  • 1 golden sweet potato, sliced
  • 1/2 red onion, cut into quarters
  • 2 Tbsp olive oil
  • Kosher salt, to taste
  • freshly ground pepper, to taste
  • 2 heads garlic
  • 4 sprigs fresh rosemary
  • 2 Tbsp white wine vinegar
  • 1/4 cup chicken broth
  1. Preheat oven to 200'C (392'F).
  2. Rinse drumsticks and wipe dry. Generously sprinkle salt and pepper to all sides. Season sweet potato slices with salt and olive oil to taste. Separate the heads of garlic into cloves. No need to peel at this stage.
  3. Heat oil in a skillet or frying pan over medium-high heat. Brown drumstick evenly, about 5 minutes.
  4. Place sweet potatoes into a baking tray, arranged in a single layer. Add the drumsticks, garlic, onion and rosemary. Bake in preheated oven until drumsticks are done but still moist, about 15 to 20 minutes.
  5. Remove baking tray from oven. Transfer sweet potatoes, drumsticks and onion on a warm plate, covered. Discard rosemary. Retain garlic in the tray (You might like to peel the garlic skin off at this stage. The skin of cooked garlic comes off easily. ) Pour chicken broth into tray, scrape up any browned bits with a wooden spoon from all sides. Add the vinegar and cook until boils. Then simmer until the sauce thickens slightly, about 2 minutes. Pour the sauce and garlic over the drumsticks. Serve hot.

这就是我的简易午餐了, 算丰富吗? 因为临时找不到新鮮迷迭香, 所以就用干的oregano代替了。 而且我觉得我的番薯应该切得更小块,不然就比较难变软。 我的鸡腿比较大块, 所以我用了大概30分钟才把它烤熟。 

这次分享就到这里,真的希望我会胃会很快好起来,我不要看到美味的食物, 却没有胃口吃不下, 那种感觉真的不好受。
