Potato Pie 马铃薯派


跨别了一个月, 我终于回来了, 心也跟着收回来了。 之前一个月真的不容易过, 不过庆幸有一班知心朋友的陪伴, 一直给我信心与鼓励, 我也慢慢好起来了。 或许很多的过程都是人生学习的机会, 经过了, 学会了, 也懂了, 一切都会过去的。 所以, 现在的自己会更努力的往前走, 坚信雨过就会天晴, 也决定要做个更好的人, 自己过得快乐的同时, 也要把幸福跟身边的人分享。 



分享一个我想要尝试, 但是一直找不到机会做的食谱, 属于比较复杂的食谱。 所以我很有耐心的用了一个下午的时间慢慢完成, 自己也乐在其中。 虽然过程比较长, 但是都不会太难掌握, 只是需要的时间比较久, 有耐心就可以了。

马铃薯派  (改编自Anncoo Journal) -可做出14个
派皮
  • 面粉 400g
  • 奶油 (冰箱拿出来)220g
  • 盐 1/2tsp
  • 冷水 5-6Tbsp
  1. 把奶油切小块, , 加入盐, 然后用指尖把它和面粉混合, 形成类似面包糠的大小, 最后加入冷水, 揉成团。
  2. 用保鲜膜包好, 放入冷冻库15分钟。 
  3. 取出, 上下垫保鲜膜, 擀成3mm的厚度, 用圆形模切出形状, 铺在涂了油的塔模。
  4. 在塔皮底用叉子弄一些洞, 然后再放入冰箱冷冻10分钟。 
  5. 取出, 在塔皮上放铝箔纸, 然后放上一些有重量的豆类/米 (我用米), 这是为了避免塔皮在烘烤是膨胀凸起。 
  6. 放入180'C的烤箱烤20分钟, 取出, 待凉。
蘑菇鸡肉馅
  • 洋葱 (切碎)1个
  • 萝卜 (切粒, 先蒸熟) 1 条
  • 罐头蘑菇 (切片) 1罐
  • 鸡腿肉 (切块)300g
  • 鸡精粉 1/2tsp
  • 盐 1/2tsp
  • 胡椒粉 1/2tsp
  1. 洋葱炒软后, 加入鸡肉炒至熟。 加入萝卜和蘑菇还有调味料, 翻炒一下即可。
马铃薯馅
  • 马铃薯 500-550g
  • 牛油 (软化)2Tbsp
  • 鲜奶油 (我用牛奶取代) 2Tbsp
  • 鸡蛋 1个
  • 盐 1/2tsp
  • 巴西叶碎 适量
  1. 用叉子把以上全部材料混合均匀。 
  2. 把鸡肉馅料放入塔皮中, 然后再用挤花袋, 把马铃薯馅挤在鸡肉馅上面。 
  3. 放入预热200'C的烤箱, 烤大概20分钟。

Shortcrust pastry
  • 400g Plain flour
  • 220g Cold butter
  • 1/2 tsp Salt
  • 5-6 tbsp Ice water
  1. Mix pastry ingredients till crumbly, add ice water into it and knead to become a dough.
  2. Shape it into ball and wrap it with aluminum foil. Put dough in freezer for about 15 minutes.
  3. Roll the pastry dough flat into about 3mm thickness between two plastic sheets. Use a round cutter to cut dough and place it into tart mould.
  4. Press the dough evenly in mould and trim excess dough with a sharp knife.
  5. Prick some holes with a fork to release air from the pastry and place the tart moulds in the freezer for another 10 mins or for a day or two.
  6. Take out tart moulds from freezer, line with aluminium foil and blind bake for 20 minutes at preheated oven 180C. Remove aluminium foil immediately from tart moulds after baked and leave tart pastry to cool. 
Mushroom Chicken Filling
  • 25g Cooking oil1 big Onion (finely diced)
  • 1 Carrot (cut to thick slices, boil to cook and finely diced)
  • 1 small tin Button mushrooms (finely diced)
  • 300g Chicken thigh (cut to small cubes)
  • 1/2 tsp Chicken powder
  • 1/2 tsp salt or add to taste
  • 1/2 tsp White pepper
Fry onion until fragrant then add chicken cubes and fry till cooked. Add carrot, button mushrooms and seasoning - stir fry well, dish up and leave to cool. 

Potato Filling
  • 500-550g Potatoes (peeled, boil or microwave till cooked)
  • 2 tbsp Soft butter
  • 2 tbsp Whipping cream
  • 1 Egg
  • 1/2 tsp Salt or add to taste
  • 3/4 tsp Fresh dill (cut finely)
Assemble Potato Pie
  1. Gently remove cooked pastry tart from mould and place on a baking tray with baking sheet underneath.
  2. Using a fork to mash potatoes and add butter, whipping cream, egg, salt and dill, mix well.
  3. Scoop the chicken filling evenly into each mould.
  4. Fill piping bag with mashed potato and pipe onto chicken filling.
  5. Bake in preheated oven at 200C for 20 mins or until light golden brown.
很久没有那么专心的去做一件事情了, 这是很好的开始。 我觉得只要用心专注的去把事情完成, 后果通常都不会让人失望。 这个派我蛮喜欢的, 因为就一次过可以吃到柔软的马铃薯泥, 酥脆的塔皮, 和蘑菇鸡肉的搭配, 算是天衣无缝吧。 唯一觉得可以改善的应该是蘑菇鸡肉可以加些浓缩的蘑菇汤吧, 这样比较不会干, 会更美味。 

要记录一下, 这个派皮的食谱很好用, 算我用过的最好的其中一个。 所以下次我会用回这个派皮, 简单得来也很好操作。 唯一我还是有点搞不清楚, 派皮要怎样才能烤得有比较漂亮深色一些呢, 我的还是偏浅黄的。

    关于塔皮的颜色,你是不是排得很密一起烤?

    我个人做蛋挞的经验,同样的食谱我做少量时,每个有一定的距离塔皮比较上色。当我排得密密麻麻的时候即使拉长时间来烤,烤出来还是不如前者上色。
