起司圣诞树面包 Christmas Tree Bread


现在来说圣诞会不会早了些, 距离圣诞节还有两个星期多的时间。 以前小的时候最期待圣诞节了, 因为有礼物收。 还记得以前天真的我还会写信给圣诞老人, 然后寄出去, 然后呢, 圣诞节前夕就会满怀期待的把塑胶袋当圣诞袜, 挂在门外, 早早就去睡觉, 期待圣诞老人的到来。 第二天呢, 果然塑胶袋里头真的有礼物, 而且还是我想要的。 那时的圣诞节有礼物收, 好幸福。 这样的快乐时光维持了好几年, 我也过了几年非常快乐的圣诞节。 后来长大后, 圣诞节也很少庆祝了, 偶尔会趁假期跟朋友聚一聚而已。



这次看到Jessie把面包弄成圣诞树的样子, 很有气氛, 所以我也有样学样。 完成过后, 觉得大家的创意无限, 普通的面包也可以弄成这个样子, 很棒。 这次为了不让面包太单调, 所以我在面包上面洒了一些起司, 弄成起司面包粒。


起司圣诞树面包 (面包食谱取自65‘C汤种面包)


A: 
  • 高筋面粉 195g
  • 低筋面粉 90g
  • 奶粉 12g
  • 细糖 30g
  • 盐 1/4tsp
  • 即溶酵母 2tsp
B: 
  • 全蛋 60g
  • 水 65g
  • 汤种 75g
C:
  • 无盐奶油 45g 
内馅:批萨起司丝适量, 香草适量
  1. 把A和B的材料倒入搅拌盆中, 使用搅拌器先慢速搅拌。
  2. 当匀后, 转成中速继续搅拌。 
  3. 再搅拌成团, 有筋性时, 才加入C料, 用慢速搅拌, 再转中速。搅拌至可拉开薄膜的阶段。 
  4. 取出, 把面团放入已经抹油的大碗中, 让它发酵大概40分钟或者双倍大。
  5. 把面团取出, 排气,将面团分成大圣诞树(50g x1, 30g x10)和 小圣诞树(20g x1, 10g x10),滚圆。
  6. 排成圣诞树的形状, 进行最后发酵40分钟。
  7. 发酵完毕, 刷上蛋液, 撒上批萨起司丝。
  8. 放入预热180‘C的烤箱, 烤15分钟。 
*65'C汤种的做法*
  1. 在500g水中, 加入高筋面粉100g, 搅拌均匀。 
  2. 放到瓦斯卢上加热, 需不断搅拌, 防锅底烧焦。 
  3. 加热至65'C离火, 面糊在搅拌时, 会有纹路出现的状态。 
  4. 在面糊表面贴上一层保鲜膜, 降温后使用。
Christmas Tree Bread
A: 
  • Bread flour 195g
  • Low protein flour 90g
  • Milk powder 12g
  • Castor sugar 30g
  • Salt 1/4tsp
  • Instant yeast 2tsp
B: 
  • Egg 60g
  • Water 65g
  • 65'C TangZhong 75g
C:
  • Butter 45g 
Mozarella cheese, mixed herbs. 
  1. Mix A and B together, using dough mixer, knead with slow speed till homogeneous. The turn to medium speed
  2. Add in butter cubes, continue kneading till a smooth dough is obtained.
  3. Let it proof for 40 minutes or double in size.
  4. Press to remove air bubbles. Divide the dough into (50g x 1, 30g x10) for big Christmas tree and (20g x1, 10g x10) for small Christmas tree and roll them into balls.
  5. Arrange them on baking pan, the 50g and 20g as tree trunks.
  6. Proof for another 40 minutes.
  7. Brush with egg wash and sprinkle with some mozzarella cheese on top with mixed herbs.
  8. Bake in preheated oven at 180‘C for 15 minutes.
  9. Dust with icing sugar before serving.
To prepare 65'C Tangzhong
  1. In a pot, mix 500g of water and 100g of bread flour, stir well.
  2. Heat it on stove, continue stirring to prevent burn.
  3. When the temperature is around 65'C, remove from heat (when you continue stiring, it becomes thicker, and when there are some lines after stiring, it's almost done, remove from heat)
  4. Let it cool down before use.
这个面包树有没有圣诞的气氛? 之前还担心我的树会不像树, 还好出来还有点像样。 比较喜欢小棵那个, 比较可爱, 而且小小一个, 或许可以当圣诞礼物, 很有新鲜感的点子吧。 在圣诞节来临之前, 拿圣诞树面包跟大家分享, 希望日子可以天天快乐, 今天比昨天过得更好。
