日式马铃薯沙拉 Japanese Potato Salad


日本餐一直都是我的最爱,喜欢它们的烹煮方式和用的调味料, 给人感觉比较健康, 多吃也不会觉得厌倦。 在怡保的日本餐厅也不少, 近年来日本餐也逐渐吸引了许多忠实支持者, 所以要在这里找有水准的日本餐厅也蛮容易的。 只是我还是对去年大阪和京都吃过的日本餐念念不忘, 尤其是那里的拉面, 我在这里还没有找到可以跟它媲美的。 

日本拉面我还不会弄, 这里先来分享这个日式马铃薯沙拉, 暂时满足我想吃日本餐的欲望。


日式马铃薯沙拉
  • 马铃薯 2粒
  • 盐 1/2tsp
  • 水煮鸡蛋 1粒
  • 红萝卜(切小粒, 蒸熟)2.5寸
  • 玉米粒 (先蒸熟)1/4杯
  • 培根  (先煎熟。 切小块)2片
  • 日本美奶滋 1/3杯 
  • 牛奶 2Tbsp (可以多加直到喜欢浓度)
  • 胡椒份
  1. 马铃薯去皮, 切块, 放入一锅水, 用大火煮。 水滚后, 降去中火, 继续煮, 直到马铃薯软 (叉子可以插进去即可), 把水倒掉, 再开中火把马铃薯煮一下 (少过1分钟, 只是要让水份蒸发而已)。 水份干后, 熄火。 
  2. 把马铃薯压成泥。 加入盐调味。 
  3. 鸡蛋去壳, 用叉压成泥状。 
  4. 把马铃薯泥, 鸡蛋, 红萝卜粒, 玉米粒, 培根混合一起, 加入胡椒粉, 美奶滋搅拌, 加入牛奶, 直到喜欢的浓度。
Japanese Potato Salad
(adapted from Just One Cookbook)
  • 2 Russet potatoes
  • 1/2 tsp. salt
  • 1 egg (hard boiled)
  • 2 ½ inch carrot (diced and steamed)
  • 1/4 cup corns (steamed)
  • 2 bacon slices (fry till cooked and cut into pieces)
  • 1/3  cup Japanese mayonnaise
  • Salt
  • Fresh ground black pepper 
  1. Peel potato skins and cut into 1 ½ inch pieces. Put potatoes in a large pot and add water until it covers all the potatoes.  
  2. Boil potatoes with high heat. After water boils, lower heat to medium and cook until a skewer can goes through the potato smoothly. Drain the water from pot and put the potato back on the stove again. 
  3. On the stove, evaporate water and moisture of the potatoes over medium-high heat (for less than 1 minute). Shift the pot in circular motion so the potatoes wont’ get burnt. When you see there no liquid in the pan, remove from heat.  
  4. Mash the potatoes but leave some small chunks for texture. Sprinkle salt and transfer it into a big bowl and let it cool on the kitchen counter. 
  5. Meanwhile prepare a boiled egg. Remove the shell and mash the egg with a fork in a small bowl. Set aside.  
  6. Add bacon, corn and carrots into the mashed potato bowl. Grind some pepper over and mix well. 
  7. Add mayonnaise and mix until incorporated. Add in milk till the consistency you prefer.
 

这个我用来搭配香蒜意大利面, 感觉刚刚好。 我自己有多加一些牛奶, 因为我比较喜欢比较湿润一点的口感。 原食谱有加入黄瓜, 可以增加香脆的口感, 应该会更棒, 我因为没有, 所以就跳过了。 我特别钟爱马铃薯, 所以只要有马铃薯的食物, 我都会非常的喜欢, 所以这个当然也不会例外, 我想一个月吃一次应该不算过份吧!

  4. Hi Min, occasionally I love serving boiled potatoes with meat dishes and salads. This is definitely a complete dish with baked or grilled meat. Thanks for sharing.
