香茅鸡沙爹 Lemongrass Chicken Satay


考虑了很久, 也犹豫了很久, 终于把一直以来很想要的grill pan买回家了。 需要想那么久, 是因为怕买了过后很少用, 就会浪费掉了。 但是最后还是抵挡不住诱惑, 把这个浅蓝色四方形不沾锅带回家了。 买了回来, 就快手找来这个食谱, 为我的新锅开张了。



香茅鸡沙爹

(A)
  • 去骨鸡胸肉 (切块)400g
(B)
  • 香茅 4根
  • 蒜头 2瓣
  • 葱头2 个
  • 糖 1Tbsp
  • 蚝油 1Tbsp
  • 黄姜粉 1tsp
  • 辣椒干 1个
  • 鱼露 1.5Tbsp
  • 海盐 1/2tsp
  • 10 根竹签 (预先浸在水里1个小时, 以防烹煮是烧焦)
越南沾酱
  • 辣椒仔,切粒 3个
  • 糖 3 Tbsp
  • 蒜头, 切碎 1瓣
  • 柠檬汁 1.5 Tbsp
  • 鱼露 3Tbsp 
  • 温水 60ml
  • 萝卜丝 适量
  1. 把全部(B)的腌料放入食物搅拌器搅打至均匀。 
  2. 把腌料和鸡块混合, 放入冰箱腌制大概3个小时。 
  3. 把鸡块串好在竹签上。 
  4. 锅内放入油, 把以串好的沙爹放入, 半途中翻面, 直到熟透。 
  5. 配上越南沾酱即可。
Lemongrass Chicken Satay 
Adapted from Seasalt with Food 

 (A)

  • 400g Chicken Breast cubed 
(B) 
  • 4 Stalks Lemongrass
  • 2 Cloves Garlic
  • 2 Shallots
  • 1 Tbsp Sugar
  •  1 Tbsp Oyster Sauce

  • 1/2 tsp tumeric powder
  • 1 dried chilli 
  • 1.5 Tbsp Fish Sauce

  • 1/2 tsp Sea Salt
  • 10 Bamboo Skewers, soaked in the water for 1 hour
 or metal skewers
Vietnamese Dipping Sauce 
  • 3 Thai Chilies, chopped
  • 3 Tbsp Sugar
  • 1 Clove Garlic, chopped
  • 1.5 Tbsp Lime Juice
  • 3  Tbsp Fish Sauce
  • 60ml of Warm Water
  • Some shredded carrots

  1. Blend all the ingredients in (B) into a paste. 
  2. Mix the paste with the chicken and marinate for at least 3 hours in fridge. 


  3. Prepare the gas grill for direct cooking over medium heat.

  4. Thread the marinated chicken pieces onto each skewer. 
  5. Grill and baste with additional oil until the chicken is fully cooked. 
  6. Serve warm Vietnamese dipping sauce.

这个看起来好想很多工, 但是还好, 没有太费时间。 成果自己很满意, 最后一人只吃了3串,还真的觉得有点不够, 下次份量要增加一些了。 这个沙爹有加入鱼露, 所以比较偏越南的口味, 沾酱汁吃会很开胃。 只是我买的鱼露带比较咸的口味, 所以下次下手要轻一些了。

  4. Min..this is really appetizing :) thanks for sharing...I think I would like this version better than our local one. Sorry ,I need to ask you this, did you use turmeric powder coz I see your satay looks a nice yellowish color :)
