Dog-shape Bun 狗狗造型面包


无意中在网上看到许多可爱造型的面包, 有狗狗的, 还有泰迪熊的, 看了心情也会顿然好起来。 所以我选择了比较简单操作的狗狗面包来尝试, 用巧克力豆弄了眼睛, 鼻子是用蔓越梅干弄了, 然后还有那个可爱得不行的舌头, 用了热狗, 很适合吧?

狗狗造型面包
汤种
  • 高筋面粉 50g
  • 滚水 60g
-把两者混合搅拌成沾粘面团, 待冷, 盖上保鲜膜, 放入冰箱冷藏至少12个小时。

面团
(B) 
  • 高筋面粉 200g
  • 普通面粉 50g
  • 即溶酵母粉 4g (1 1/2tsp)
  • 细糖 35g
  • 盐 4g
(C)
  • 冷水 90g
  • 冷鸡蛋 60g
(D)
  • 奶油 40g
 馅料:
(I)
  • 奶油乳酪 (cream cheese) 95g
  • 细糖 20g
  • 鲜奶油 25g (我用牛奶取代)
(II)
  • 即用卡士达粉 1tsp (没有的话可用粟粉取代)
  • 杏仁/核桃 40g
* 把(I)用搅拌棍混合均匀, 加入 (II),继续搅拌至匀。放入冰箱冷藏固定, 备用。
  1. 把(A)从冰箱取出, 放入搅拌缸, 加入 (B)和(C), 搅拌成团。
  2. 加入 (D)继续搅拌成光滑有弹性的面团, 发酵45分钟。
  3. 面团分割成每个90g, 搓圆, 松弛10分钟。
  4. 把面团杆成椭圆形, 然后中间放些馅料, 下方放上热狗片。 对折盖上, 用剪刀在面团上面两角剪开, 稍微剥开。 (看图片)
  5. 让它继续发酵45分钟, 烘烤之前把巧克力都和蔓越梅干放上。
  6. 用190‘C烤15分钟。

Tangzhong
  • 50g high proten flour
  • 60g boiling water
Add the boiling water to the flour and mix to form a sticky dough. Leave it cool and cover with cling film. Keep inrefergerator for at last 12 hours.

Main dough
(B)
  • 200g high protein flour
  • 50g plain flour
  • 4g instant yeast
  • 35g castor sugar
  • 4g salt
(C)
  • 90g cold water
  • 60g cold eggs
(D)
  • 40g butter
Fillings: 
(I)
  • 95 g cream cheese
  • 20g castor sugar
  • 25g whipping cream (can be replaced with milk)
(II)
  • 1tsp instant custard powder(can be replaced with corn flour)
  • 40g walnut  
* Beat (I) till even, add in (II) and mix till homogeneous. Keep in fridge to be used later. 
  1. Remove (A) from refrigerator, put (B) into a mixing bowl, then add in (A) and (C) and knead to form a dough.
  2. Add (D) and knead to form a smooth and elastic dough. Leave it to proof for 45 minutes.
  3. Divide the dough into 90g each and shape into round. Leave to rest for 10 minutes. 
  4. Roll each dough into oblong shape. Place some fillings in the middle and piece of small ho tdog slices at the bottom. . Fold into half as shown in the picture. Cut the upper part with scissors to make the ears. 
  5. Proof for another 45 minutes. Apply the chocolate chips as eyes, dried cranberry as nose.
  6. Bake at preheated oven at 190'C for 15 minutes.

这个狗狗造型面包很可爱吧, 我看了很久, 很不舍得吃。 造型的步骤我是参考hsling的, 很简单, 就可以有可爱的狗狗出炉了。 我加了自己喜欢乳酪核桃内馅, 如果要方便一些, 直接加入奶油内馅还是可可酱也是可以的, 随个人的喜好。
