一点红之玉米片脆饼 Crunchy Cornflake Cookies


还是新年饼干, 现在做的都是‘寻找+尝试’的阶段, 看那一些饼干可以做来送人。 记得去年我也有做类似的玉米饼干, 但是感觉不是我要的那种口感。 所以我还是一直在寻找, 希望有一天可以找到合我口味的 (讲到好像找白马王子一样^^)。 果然老天不负有心人, 给我试了Florence的食谱, 跟我要的口感差不远了。

食谱:(取自 Do What I Like)

牛油 (室温软化) 110g
细糖 50g
盐 少于1/4tsp
蛋黄 1个
香草精 1/2tsp
橙皮削 1-1.5tsp
低筋面粉 150g
泡打粉 1/4tsp
苏打粉 1/8tsp
玉米片 (corn flakes) 压碎 50g

蔓越莓干装饰用
  1. 把牛油, 细糖, 盐用电动搅拌器打发。
  2. 加入蛋黄和香草精, 搅拌均匀。
  3. 加入橙子削, 拌匀。
  4. 筛入粉类, 再加入玉米片。
  5. 混合一起, 形成一个软面团。
  6. 取半大匙面团, 揉成圆形, 压平, 在中间放一小颗蔓越莓干。
  7. 放入预热175'C的烤箱, 烤18-20分钟。  
Ingredients: (Adapted from Do What I Like)
110g butter (room temperature)
50g castor sugar
less than 1/4 tsp salt
1 egg yolk
1/2 tsp vanilla essence
1 - 1.5 tsp orange zest
150g cake flour
1/4 tsp baking powder
1/8 tsp baking soda
50g cornflakes

Cranberries for garnish (optional)

Method:
1. Sieve flour together with baking powder and baking soda.
2. Cream butter with sugar and salt till creamy.
3. Add in the egg yolk and vanilla essence and cream till well combined.
4. Stir in the orange zest.
5. Fold in the sieved flour mixture and cornflakes. Mix till you get a soft dough.
6. Divide dough into equal pieces of about 12g each, shape into flat rounds.
7. You can stick a cranberry into the middle of the cookie before baking.
8. Bake at 175'C for 18 - 20 minutes or till golden brown.

     
    其实我在为饼干做造型的时候, 对它的期待不大, 因为我觉得我的饼干好丑。 面团不好操作, 我的饼干也不完全是圆的, 很多奇怪的形状。 不过还好饼干烘出来的效果没有让我失望。 其实我也是饼干弄好的第二天拿来吃, 才觉得这个饼干很棒, 哈哈。 其实我也不懂为什么, 一开始就是看它们不顺眼的, 但是后来却爱上了。 


    我建议大家把玉米片压比较碎, 这样就可以吃到很脆的饼干了。 而且我觉得把饼干弄得比较薄, 会比较好吃。 这个我也大大推荐给大家, 脆脆的, 而且有玉米香, 吃多也不会腻。 

    好, 新年饼干又多一个选择了!

      Joelyn: 因为这个加了玉米片碎所以就很脆。 我觉得这个口感跟杏仁酥不一样, 那个是溶在口里, 这个则是脆的, 试试看吧!

    12. Love the cherry in the middle.
      Somehow, although small, it does make a whole lot of difference.
      When I made something similar 2 years back, the cherry on it, gave the cookie a nice flavour and fragrance.

      Oh yes, there are apricots in Ipoh la. I just bought some today. Every northern or southern season, I've seen them in Jusco w/o fail these recent years.

    26. hi,我想请问我昨天照这个分量做,mix完后是粉状的,好像做上海月饼的皮一样很难搓圆,但是成品出来非常脆非常好吃。你做的时候是不是也是这样??

      为什么今天我把分量加了一倍后,mix完了是面团,不是粉状的了,烘出来也没那么美味!到底什么问题?><!!
