香脆香浓之 '奶汁玉米可乐饼' Corn Croquettes


记得以前做过可乐饼, 而且很喜欢吃, 因为里头有我喜欢的马铃薯。 后来在小小米桶的书中看到这个 ‘奶汁玉米可乐饼’, 就觉得很特别。 虽然里头没有用到马铃薯, 但是我还是被它的图片吸引住了。 而且材料都是随手可得的那种, 所以就尝试了这道小点心。





奶汁玉米可乐饼 (取自小小米桶的写食厨房)
  • *玉米粒罐头 1/2罐
  • 糖 1Tbsp
  • 面粉 适量
  • 鸡蛋 1个
  • 面包粉 适量
奶油白酱材料
  • 奶油 50g
  • 面粉 4Tbsp
  • 鲜奶 150ml
  • 鲜奶油 50ml
  • 盐 少许
  1. 锅中放入奶油融化, 加入面粉以小火拌炒, 再分次加入鲜奶, 鲜奶油拌炒均匀后, 加入少许盐拌匀, 即为奶油白酱备用。
  2. 将玉米粒, 糖以及做法1的奶油白酱混合均匀, 称为玉米奶油酱备用。
  3. 取一浅方盘铺上保鲜膜, 倒入做法2的玉米奶油酱, 表面抹平后待冷后放入冰箱冷冻2个小时, 备用。
  4. 取出凝固的做法3, 以喜好平均切成数等份后, 再依序沾上适量的面粉, 蛋液, 面包粉, 备用。 
  5. 取一锅, 放入适量的油, 烧热后, 将做法4的奶汁玉米可乐饼放入油锅中, 以中小火油炸至金黄色, 捞起即可。

  • Canned corn 1/2tin (I used mix vegetables)
  • Sugar 1Tbsp
  • Flour
  • Egg 1
  • Bread Crumb
White Sauce
  • Butter 50g
  • Flour 4Tbsp
  • Milk 150ml
  • Whipping cream 50ml
  • Salt a pinch
  1. For the white sauce. Melt butter in a pan, add in the flour and fry with low fire.
  2. Next, add in the milk and whipping cream in several additions, mix them till well-combined and add in some salt at last. Leave aside to cool down.
  3. Mix the corn, sugar and the white sauce from step (2) in a bowl till well-combined.
  4. Put the mixture from (3) into a thin rectangular plate and cover with cling film, store in freezer for at least 2 hours before using.
  5. Cut them into equal small pieces, dip them with some flour, follow with egg wash and lastly bread crumb.
  6. Fry them in a pot of hot oil.

    书上有说这个和中式的炸鲜奶有点相似, 但是我也不懂炸鲜奶是怎样的, 在这里都没有见过。 这个跟平常我们吃的可乐饼有点不同, 这个的重点应该是它的奶油白酱吧, 香香浓浓的, 配上酥脆的外皮, 真的很不错。

    就是这样香浓的内馅, 让人停不了口。
