腐乳炸鸡块 (食谱改编自小小米桶的超省时厨房)
- 鸡胸肉 300g
- 木薯粉 适量
- 九层塔 1小把
- 胡椒粉 适量
- 辣椒粉 适量
- 腐乳 4小块
- 蒜末 1Tbsp
- 米酒 1/2Tbsp
- 糖 1Tbsp
- 鸡蛋 (搅打成蛋液)2Tbsp
- 麻油 1tsp
- 鸡肉洗干净后切成1.5公分小块; 腐乳压成泥, 再加入所有调味料拌匀, 加入鸡块, 腌约30分钟。
- 将鸡肉均匀沾裹上木薯粉, 静置3-5分钟后, 放入油锅中, 以中火炸至表皮金黄酥脆状, 捞起。
- 开大火, 让有升温加热, 在把鸡肉放回锅内炸约30 秒, 让鸡肉变成酥脆, 接着放入九层塔速炸一下, 即可捞起, 撒上胡椒粉和辣椒粉, 即完成。
- Chicken breast 300g
- Tropica flour
- Basil leaves 1stalk
- Ground pepper
- Chilli powder
- Fu Yu 4 small pieces
- Chopped garlic 1Tbsp
- Rice wine 1/2Tbsp
- Sugar 1Tbsp
- Egg (light beaten)2Tbsp
- Sesame oil 1tsp
- Cut the chicken breast into 1.5cm small pieces, mix with the mashed fu yu and other marinades for at least 30 minutes.
- Heat up oil for frying. Coat the chicken with a layer of tropica flour, and put into oil, fry until golden-brown. Dish up.
- Turn to high heat, continue heating the oil to let the temperature increased. Fry the chicken pieces again for around 30 seconds, for them to become crispier, then put in basil leaves for few seconds and dish up both the chicken and basil leaves.
- Sprinkle some pepper and chilli powder to serve.
